So, Hearthfire will apparently let you turn any follower into your steward to maintain your estate whilst you go gallivanting off to murder, loot, and annoy.

So, who will your steward be? Who can you trust to look after and guard not only your holdings, but your family (remember, you can adopt pets and children)? After all, a mercenary only in it for the pay might rob you blind and leave, or worse, use your estate as a base for a group of brigands!
Faendal of Riverwood is definitely out. In one playthrough he kept sneaking in when I wasn't home to make advances at my wife. I moved us all around skyrim, and he kept chasing her, so I was eventually forced to push him off the tall cliff in markarth. He ought not have trifled with the bride of the Listener. But still, this shows him to not only be untrustworthy, but undependable. His mind will be on that poor woman he stalks, not on the condition of your home.
Your colleagues at the mages guild are similarly undependable. They have their own research to see to, and could never devote the attention you would want from your steward, and that's if they don't burn the place down in the first place.
Now, if you are the Listener, an initiate might make a good choice, as they would be entirely devoted, and entirely capable of defending your home from invaders. But I would personally prefer a steward I can converse with as a friend, not one who reveres me as a religious leader.

For my money, I think my steward will be Illia or Adelaisa Vendicci

I am dark brotherhood and I plan to make one big safe house and several small safe houses. The only one with anything worth guarding will probably have a dark brotherhood member guarding it.

Can't let Lydia know who I really am.

Well, since Marcurio got to do nothing because I was forced to bring Serana everywhere, it's payback time. I'd pick either pick Serana, Marcurio or one of the Werewolf Companions.

Hey, I'm the Harbinger, it's not like they do anything!

However, that Dark Elf who joins the Mages Guild at the same time as you may be a good pick...

Oh, choices.

Hmm, it would have to be someone that would be content with housekeeping. Maybe that woman that owns the run down mill between Riften and Markarth. She was pretty awesome

On a previous play through as a big muscley barbaric Nord manly man she saw me slay a dragon and absorb it's soul, while wearing full Daedric. I walked up to her and the first thing she did was slag off men going to war and leaving the women to do all the work. She was awesome.

Lydia, I mean she sits at my house and does nothing, may as well give her a job doing it
She eats your food while staring at you while you sleep, that's so far from nothing it gives my character nightmares. If I had to give her a job it would be sweeping and dusting the dwarven underworld.

I'd prefer if I could just get my husband to do it, look after our house while I'm off finding priceless historical artifacts to decorate it with.

Or maybe get Paarthy to move on in, if I can pile a few beds together for him. Poor thing shouldn't be stuck up a cold, windy mountain when he could just come live with me!

Lizzy! You know that one Argonian archer follower who you rescue from the Falmer. Though then again I would want to adventure with Lizzy, but if I was playing a sneaky guy Lizzy is definitely my choice.

What's the listener? I still haven't got the game yet.
The leader of the Dark Brotherhood, a guild of religious assassins who worship Sithis, a god who is the void of space and always hungers for souls to serve him in death, and if you are really good after you die you can become a spirit assassin.

I'm still contemplating getting Hearthfire, I'm still not sure if it's only limited to houses or if I can make my own doom fortress.

My assassin needs his own doom fortress.

Then who will guard your Whiterun holdings?
Easy, my 6 over buffed frostbite spiders. Yay console commands. :D

Lydia hands down. Especially since I used the Wabbajack to reset her level after I hit the cap. At level 81 and wielding a giant's club and decked out in dragon bone armor, she is the baddest ***** in the land. Also tits, so that's a bonus.

Why not? She couldn't do anything about it... She's honorbound to your service, and while she may not murder at your command, she cant say anything about when you do it. Plus, she HAS to know you are more powerful than her in combat, so she could never kill you herself. And if she tries reporting you, you can pull up stakes and move elsewhere, and then SHES DEAD. And since every town has at least one guard who worships sithis, theres always a chance her report would never be heard by anyone else. so she's dead.

See, i've (metagame) never liked lydia, so I've made sure to take her along when i've dirty work to do. That way she not only knows who i am and what i do, but she's now and accomplice.

you know, that kind of ignores the spirit of the exercise, here. But even so, you've still left your home in whiterun undefended. As a semi-legal adventurer who's "job" takes me from one corner of skyrim to another, I have all the houses purchased and filled with supplies (and trophies). I don't want thieves to be able to break in and steal my hard-won knick-knacks

well, from advance screens, you can create a whole villa, and I figure for five bucks, its worth having so i can build my own manor on the xbox

One of the Companions. They seem the most trustworthy and some are rather eager to settle down. Lydia? Meh, I'd likely let her retire in Breezehome for as long as I've had her around already. I don't think my kids would turn out right if I left them alone with Aunty Serana. I still haven't decided on a bride yet. I'll have to consider one of the highborn families for that.

Any follower? Does that include Meeko?

I already have the "Give a Dog a Home" mod so that he can live with me in any of my houses. I think he would be just as capable of maintaining my home as the other followers.

Might try and convince Erandur to leave that dusty temple. Or I could try and use my undead thralls, I mean, I already use them as glorified packmules and I have been looking for other ways to punish Galmar.
