Anything Cake has ever covered.
Manson's cover of Sweet Dreams
KSE's cover of Holy Diver

I could go on but that's just to name a few.

Isn't it mutually accepted that Jeff Buckley's version is like 100x better then Leonard Cohen's, hell Leonard didn't even like his version and only became popular post humorously, Though I guess the same could be said about Jeff.
For that song, I'm actually rather enamored with Bon Jovi's version.

So am I. Heard 'em do it last year. Don't think there was a dry eye in the house when Jon sang that song. But I think you'll find that Leonard Cohen is still alive and touring at the moment, :) Unless you really did mean 'humourously' and not 'posthumously', which are different.

Wynonna made a version of Burning Love that I like more than Elvis Presley's.
Are we talking about the one that featured on the Lilo & Stitch soundtrack? If so, I agree. It was a lot of fun!

Anything that Type O Negative did. Summer Breeze, Set Me on Fire, Beatles Melody, Santana Melody, Paranoid, Pictures of Matchstick Men, Cinnamon Girl, Black Sabbath, Hey Pete. All are amazing and add so much to the originals.

Not better, but I like it for different reasons.

Oooooh I've got a few of these.

First, basically anything by Johnny Cash from the American Record series is either greather than, equal to, or very close to equal to the originals.

Next, Mouth of the Architect's cover [http://www.youtube.com/watch?v=Z118lF7vQUw&feature=BF&playnext=1&list=QL&index=3] of the Peter Gabriel song "In Your Eyes." [http://www.youtube.com/watch?v=Zrzr4R3LpsQ&feature=BF&playnext=1&list=QL&index=4] Kinda cheating since it preserves nothing but the lyrics and some of the melody in said lyrics, but hey.

Rammstein's cover [http://www.youtube.com/watch?v=KyAyuZPNo2w] of Depeche Mode's song "Stripped" [http://www.youtube.com/watch?v=qU8UfYdKHvs] gets major props. I would say definitely at least equal.

Big props to the Rammstein cover [http://www.youtube.com/watch?v=V_tOv2WkOHY] of Aria's song "Shtil'". [http://www.youtube.com/watch?v=ktDzDhH0Ce8]

A Perfect Circle's cover [http://www.youtube.com/watch?v=dunKAwRN3P8] of John Lennon's "Imagine" [http://www.youtube.com/watch?v=-b7qaSxuZUg] is definitely a successful cover.

Lastly for the purposes of this list, A Perfect Circle's cover [http://www.youtube.com/watch?v=df3xWMBSdx0] of Led Zeppelin's "When The Levee Breaks" [http://www.youtube.com/watch?v=WbrjRKB586s] is different, but very cool in its own right.

I love Joy Division, but Nine Inch Nails' cover of Dead Souls was so much better than Joy Division's version.

Forgot:
Breed by Otep
Bad Company by 5 Finger Death Punch
Rebel Yell by Dope
Spin Me 'Round by Dope
In the Air Tonight by Nonpoint
Faith by Limp Bizkit

I'll also add:
Electric Avenue by Skindred (I did notice someone say it however)
Let the Good Times Roll by Powerman 5000
Walk by Avenged Sevenfold
Crazy Train by Bullet for my Valentine
Too Cold (AKA Ice Ice Baby) by Vanilla Ice (it was Ice's attempt at some Rap/metal stuff, and I think it was actually pretty damn good)

For some reason, I greatly prefer the Metallica covers of both Tuesday's Gone and Turn the Page to the originals.

Anything by Bob Dylan. That's why his songs are covered so much - no matter how bad a job you do, it's always going to sound like gold compared to the original.
I disagree--Guns 'n Roses' cover of "Knocking on Heaven's Door" hurts my ears, primarily because of Axl Rose's nasal whine.
