Seriously, this long and no one has mentioned Eddie Izzard yet? I call Eddie Izzard. The man is a genius.

I didn't know you had to be an atheist to enjoy a routine written by a Jewish comedian.

You should all be ashamed for not mentioning any of these fine, fine gentlemen.

Edit: Half-ninja'd. I have faith in humankind once again. :)

George Carlin should be at the top of any list when learning about standup. RIP George.
Personally preferred Bill Hicks but George was certainly the man and I think he was the influence for Hicks. I could be wrong on this though.
See, it's funny if that's true because I can't stand George Carlin's standup, I just don't find it funny, Bill Hicks on the other hand is my god. I genuinely think he's the funniest guy i've ever seen.

Offensive: Jim Jeffries, Frankie Boyle.
Clever: Bill Hicks, Stewart Francis, Greg Proops.
Surreal genius: Ross Noble.

Ross Noble gets a particular mention, given that his set is entirely made up on the spot. No rehearsed/written material.

Examples:
"Never put a blanket over an Owl"
http://www.youtube.com/watch?v=UxVec_zCC80

and "Cheeky Muslim"

Ben Bailey is a comedian that never disapoints.
And yes he is the host of the Cash Cab.
