Hell yeah. Carrots are awesome.

In my opinion, if you like beans, the single best vegetable ever is the edamame bean. They're a kind of soy bean, loaded in fiber, and come in pods, frozen. You can probably find bags at your local grocer. What you do with them is salt them while in the pod, then squeeze them out of the pods between your lips.

If carrots have heroin in them, these have cocaine in them.

Fruits are a specific part of botany in flowering plants. What we call vegetables range widely from roots, stems, leaves etc. Most tubers are pretty high in calories, higher than a lot of comparable fruits even, something the OP seems to ignore. The OP classifies vegetables broadly as anything that isn't a fruit or seed and suggests that such a wide variety of structures in a wide variety of plants can be thought of in general terms.

Fun Fact 2: Carrots used to be purple. They were bred to be orange by the Dutch in honour of their royal family.

OT: I quite partial to parsnips. Also mashed turnip/suede is nice if you find something to mix it with. Ideally, gravy.

Beets are a perfect example of how parents not knowing how to cook a food can ruin it for you forever.

I had one in my dream once. I doubt they exist but I can defiantly recommend them...

im sorry to hear that, will you give them another try? oh ya! fiddleheads are also a good example of that.

Peas! Squashes! Not true vegetables but totally awesome.

I like courgettes (zucchini) as an alternative to cucumbers. Wikipedia claims, "there appears to be variability in the human olfactory response to cucumbers, with the majority of people reporting a mild, almost watery flavor or a light melon taste, while a small but vocal minority[footnote]Including me.[/footnote] report a highly repugnant taste, some say almost perfume-like. The presence of the organic compound phenylthiocarbamide is believed to cause the bitter taste."

Not to mention cauliflower and broccolli.

Celery, man. That is one of the best vegetables out there. You can eat it as a snack, dip it in almost anything, put it in stir-fry's, add it to salads or soups, etc. And it tastes awesome and it really satisfying to eat because it's so crisp and crunchy. Hell, celery root is even a vegetable and it's really good, I hear. Never tried it myself, though.
