Life. I keep getting better every day, and even though some classes need to be killed off, it's still great fun.
Rock Band 2 is also a decent game to replay as long as you like music. It's much better with friends, though.
Oh, and I'm still playing Torchlight.
That is wonderfully replayable to me. It tickles the inner loot whore enough that the repetition doesn't really bug me.
Digimon World 1 and 3. Just picked them both up on PsX, as trying to play the discs on the old decaying fossil that is my PS1 is probably tempting fate.

Dynasty Warriors 6 Empires, or Warriors Orochi 2 are some more up-to-date names I would recommend for replayability. They may not be too new, but anything newer and I wouldn't be able to tell you whether it stood the test of time. You see my conundrum.

Really any game that you can keep your items from the last play through is fun to replay. Until you are a god in that game it is fun, then you just start all over again.
I always found the Operation Flashpoint game to be highly replayable.
Since the limits of where you can go in the game is limited only by th water that the island is surrounded by (and even then you can still fly a chopper or use a boat, you are open to an infinite amount of angles to attack from and an endless amount of different strategies to employ to complete your objective. The games never play the same exact way twice.
