In UT 2004, I killed the enemy with most kills with a shieldgun.

EDIT: And killing hackers/ cheaters is fun as hell.

Hitman Bloodmoney

Task:
Assassinate opera tenor and some ambassador.

Notes:
Opera Tenor gets shot with prop pistol during rehearsals

Satisfaction:
Replace prop pistol with real pistol during a break in rehearsals, placing explosive on chandelier support in theatre. Go into theatre to watch rehearsals. The Tenor is shot with the real pistol, the ambassador ambassador runs into theatre, trips over DIRECTLY under chandelier, I trigger the explosives and the chandelier crushes him.


Mission complete, time to GTFO.

Getting a revenge kill with a backstab in TF2. Especially when it's planned, and you live to tell the tale. (Yes, I'm a bad spy) :(

Either that, or taking down a Scrake with one well-placed crossbow bolt in Killing Floor. It's hard to separate the two.

Playing the Uncharted multiplayer beta. I was playing on the Ice Cave map. I was climbing up on one of the holes in the middle of the map. When I got up, still on the ledge, I saw a guy running towards me. I stay still then and wait for him to come.
He sees me, and instead of stopping and trying to shoot me, he keep running forward, and is just about to lob a grenade at me.
I pull him down, he still holding the grenade in his hand, so he falls down, gets killed by the fall, then the grenade explodes and kills 2 more people.

There was one time I was crouched behind a wall in Rainbow Six Vegas. I was in one of those high up tunnel things (That connects buildings) and there was another one a few meters away, I noticed there was an enemy in there against the wall so I decided to nade him. I threw the grenade at him, it hit him on the head and killed hi, without the nade exploding.

There has also been times on Battlefield 2 where I've been the last guy alive on my team and all hopes depend on me. Every kill I get when I'm the last is satisfying, I feel like rambo. It feels awesome to capture the enemies spawnpoint and save your team xD

Halo 3 ODST I was having the worst time clearing a room full of brutes near the end of the game when one of those Brute Chieftains comes out packing a plasma turrent without even thinking I lobed my last plasma grenade forgetting that it wont stick to his armor only to have it stick to his weapon.
End result one dead brute.
Very satisfying.

I'm going to have to go with Fallout 3 V.A.T.S. kills as well, although, on my present playthrough I'm not using guns, so, I'm going to insist that there's nothing more satisfying than killing a rabid dog by kicking his head off in slow motion. Kicking his head off in slow motion.

It's satisfying because I'm a cat person.

TF2, disguised as Heavy, a medic healed me so that his ubercharge went from 0-100%, then I backstab him and flick a cigarette :)

Or in SSBB as captain falcon I knocked my friend off the stage, ran and jumped off then falcon punched him in mid air. Priceless reaction.

On backlot on CoD 4 playing hardcore it was in the first 30 seconds of the match i was running around the hit a dead end, so i decided to fire a single bullet into the wall infront of me with a LMG (from the hip) and i got a headshot. It was the flukeyest moment of my life followed my the uncontrolable laughter by me and my mate who was sitting next to me at the time :)

During a car chase in Red Faction:Guerilla,I was at the back of a truck,using a rocket launcher while bad guys were chasing my truck in fancy armored cars.
One of these cars had a gunner popping out of the roof.
Naturally,I fire a rocket.

The rocket hits the back of the car(roughly) sending it in a front wheelie,practicaly vertical.
As I watched,very amused I might add,I noticed the gunner(that was in a horizontal position,still half in the car) was slowly outrunning the car,gradually flying out of it.

It gets better,the car,having no control over its movements,was pseudo-driving straight ahead,while my truck turned sharply left,revealing a small building on the side of the road.
As Murphy's law demands it,the enemy car slammed,roof first in the building catching the gunner in the middle of a deadly concrete/steel sandwich.
This crash was accentuated by the fact that the car went through the first concrete wall and lodged itself inside the building.

Unfortunatly,I didn't see if the car exploded or not as more bad guys were coming.Though,seeing the guy's luck that day,I predict there were explosives and a pair of genetically modified flying sharks with laser beams in the building.

Totally different gaming medium than everything posted here, but Friday night I was playing a 4th level Mage in an AD&D game, and we got attacked by Gibberlings. I can only have 5 spells, and I spent my first of TWO direct combat spells on a pudding (basically a midget gelatinous cube), and when we got attacked by the pack of Gibberlings, I waded into the fray with my quarterstaff. First thing I attacked, I said "I'm going to smash it's throat in. It's more fun that way! They GURGLE!"

I rolled.

Natural 20.

=D

One shotted a Gibberling by collapsing it's throat, was so awesome. =D

Any kill involving inceniary weapons or environmental hazards. I've had some pretty sweet barbeque kills in Half-Life 2, as well as hurling rotary saw blades, railroad spikes. Good times to be had for all.
