I know it does not fit as "underrated," but Square's big win in soundtrack was "Chrono Cross." For a more underrated pick, how about "Rogue Trip, Vacation 2012?"

The Twisted Metal soundtracks never seem to get the love they deserve. At least, not by many that I know. Maybe I'll be proved wrong.
I love the Twisted Metal games and their music is awesome to blow up cars to.

Back on Topic i think everybody forgets about Tempest 2000 on the Atari Jaguar.

I hesitate to call anything related to Final Fantasy underrated, but the FFIX soundtrack is brilliant, but often overshadowed by the soundtrack from FFVII.
It really is, and the piano collection is just as amazing. I have all the Final Fantasy piano collections, and find them to be the most soothing and enjoyable collections I've ever listened to.

Two of the most underrated, in my opinion are Donkey Kong 64:

and Primal, for the PS2:

Olivier Deriviere's score for Alone in the Dark almost made it worth playing that game.

Skip to 1:50 on the first one for some of the absolute best score EVER.
Fantastic, right? I've heard terrible things about this game, but between the soundtrack and the $5 price tag, I bought it anyway. I figure, at the very least, I can enjoy the soundtrack and roast some marshmallows.

I think Greg Edmonson did some pretty damn spiffy work for Uncharted 2, actually. But then I am a sucker for composers like John Williams, and epic orchestral movie scores. I think the music he has written here matches the game so perfectly, while also being entirely enjoyable in its own right.
