A) You don't have infinite time to develop software. I believe DNF has proved this handily
B) You don't have an infinite amount of money. Especially not in this day and age.
C) By this same token, The Jasper architecture of the Xbox 360 has now made the RROD less of a problem, and therefore it is not going to "melt down on you multiple times". Although this does raise the question if any of the 360 dev kits (which are not 100% the same as the console itself, mind you) had this same problem.
In the development business, user-friendliness is a big deal. This is what killed the Atari Jaguar, but at least Sony had the time and money to try and make their dev kits better wheras Atari just crumpled.
