It's not grammar though. "Couldn't" care less means you are at the lowest possible level of caring - you can't care any less than you do because you don't care at all.
Could care less means you care at
least a little bit, since you have room to care less, and... what sense does that make? Any percentage from 1% to 100% caring could be given, and you'd still be able to truthfully claim that you "can" care less.
...it ain't hip at all it's just pure logic. "Could care less" just doesn't make any sense.
