For me it goes like this.
when Im confident/in ass kicking mode, i lean forward intently and grip teh controller very hard.
when I'm stressed, I take a mouth full of air, and push it back and forth between my cheeks making one puff out, then the other, and so forth. I always do this without fail and as a result I now have stupid strong cheek muscles. chipmunks have nothing on me.

In RPGs I usually read aloud the choices given to me, in shooters I try to move my body to see if I can look around a corner, and if I'm getting pounded on by something I usually start saying "oww" or "that hurt"

Also when I losing alot, i usually tend to argue at the bad-guy. "Wtf your problem! I am stuck here taking out 1000 guys alone, and you just keep respawning!"
