I'm quite certain that my choice hasn't been done. I'm quite certain there isn't a pokemon based on the Thorny Devil:

Stick Insect: Sudowoodo would be my best guess
That would work if it was a bug type, but it isn't, is just plain rock.
And Torkoal doesn't work as a tortoise tribute, because he's fire?
http://img.pokemondb.net/artwork/torkoal.jpg
Actually, it works perfectly. Torkoal is Rock/Fire. Tortoises live on land, and rocks are a part of the land, so it works.

The only way Sudowoodo would work is if it was a bug type. Besides, even stick bugs look like bugs in some way. Sudowoodo looks only like a tree and has no bug characteristics.
He's just fire =|
He's a flaming tortoise.

fox? although apparently zoroark and zoroa are meant to be they look nothing like it
gorilla
eagle?
tiger?
lion?
ant?
Fox: Vulpix and/or Ninetales
Eagle: Either Swellow or Fearow. Fearow definitely has the wingspan for it, not quite the look though. Pidgeot isn't very eagle-ish. Braviary however is very eagle-ish.
Tiger: Manectric is tiger-ish, but leaning towards lion.
Lion: Luxray as others have said, and Entei.
Ant: Durant

Pretty sure Gorilla hasn't been done before.
If you have a problem with him being a flaming tortoise than maybe this will help you:

It looks close enough but...well, it does seem to be called a dragon type pokemon and has wings so i guess the votes still out on it a bit.

Sponges. They have never made a sponge Pokemon. They've made a coral Pokemon, but not a Sponge Pokemon.

I have no problem with him being a fire type, I was just trying to show that the type doesn't mean a damn thing as far as animal = pokemon goes.

I'm not fond in Pokemons >1 Gen. But I'm certain these haven't been done:

Nematodes and Flatworms. But I'm sure they WILL come

Wikipedia said:
Although adult sponges are fundamentally sessile animals, some marine and freshwater species can move across the bottom at speeds of 1-4 millimetres (0.039-0.16 in) per day, as a result of amoeba-like movements of pinacocytes and other cells.
I'm calling it right now...fastest pokemon ever.

They haven't done a Sea Cucumber haven't they? I haven't followed the more recent generations, but I'd be surprised if they have.

I'm gonna be honest, I'm not 100% familiar with some of the newer gens (Black and White I know nothing really) but from the looks of it they are veering towards inanimate objects....

OT: There is a lot of "specific" animals that aren't covered, but as a whole they've covered a lot of the "general" types of animals. I was about to say a tiger but than Raikou came to mind... For now I give up on thinking of animals that aren't and shall help with the ones that are Pokemon lol

A scorpion?? :/
Skorupi and Drapion. Though...Drapion is kind of up for debate. Just because it's "arms" are coming out of it's head and it's entire body is quite oddly shaped.

Have they done a badger?
Linoone yes?
I wouldn't really say that was a badger, more a generic rodent.

And big cats. I've thought about this question long and hard, and I realised I have yet to see a Lion, Tiger, Puma, Leopard - any of those things - in a game.

I mean, yes, technically, Luxray is a lion, but it really doesn't look like one.
Lion - Entei
Tiger - Raikou
Leopard - Liepard
Puma - I got nothing lol

Entei and Raikou are a legendary DOGS, and Liepard is just a glorified cat.
Yes I know they are legendary dogs, but I'm going based on the fact that they look like the animals. Yes Liepard is more cat like, regardless I'm pretty sure it is based on a leopard.
