Regarding 'cheesing' fights: The intent of the developers, to the best of my understanding after having played five of the six Souls games, is 'whatever works'. At the end of the day, the only thing that matters is that you're alive and the boss is dead. How you get to that point doesn't matter. So whether you fight enemies head-on with perfect dodges, parries and charged R2 knockdowns, or trick their AI into getting stuck running in place while you wail on them with a bow (especially since it's not guaranteed you can make that happen first try every time), or find a wacky setup of stacking buffs that lets you wipe the boss's whole health bar in one hit, or summon Let Me Solo Her -
None of those are the 'wrong' way to do it. The only 'wrong' way is to die. If you lived, that was right. So go ahead and give that Capra Demon the business.
Or a shorter version: Nothing in this game 'fights fair'. Don't feel bad about not fighting fair yourself.
