Really? I'm not massive JRPG fan (my 'recent' pile of games includes only LO and Tales of Vesperia), but I thought the bosses were great. Actually, Demon's Souls is pretty easy. So far I've killed Phallanx, Tower Knight, the Red Dragon, Adjuncicator (whatever the fuck his name is), Flame Lurker, Armor Spider, Fools Idol and Vanguard.
