I got bored of typing the same answers every time, here:
I should keep a list like that.

ICO and its "spiritual prequel"
Shadow of the Colossus. Both look lovely and are heavy on exploring wide-open, free-roaming areas. The first is based on an escort mission and the latter on a sixteen-colossi boss rush.
- Everything developed by Clover Studios for Capcom.
Viewtiful Joe , a 2D side-scrolling beat 'em up,
Okami, a gorgeous Zelda-ish action adventure game and
God Hand, a 3D beat 'em up with nostalgia value. All of these games look and play great and have original mechanics blending nicely with gameplay and storytelling.
- On a survival horror note I think
Resident Evil and
Silent Hill are obvious picks, both are very trustworthy serieses. SH2 and RE4 are the best on the PS2, in my opinion. Other great survival horror games are the
Fatal Frame and
Siren serieses;
Haunting Ground,
Cold Fear,
Kuon,
Rule of Rose... not all of them are as scary, but they've all got something of interest, I think.
- I think the
GTA games are also an obvious pick. On the PS2 you have
GTA III,
Vice City,
San Andreas and all the "Stories" spin-offs.
San Andreas remains the best-selling game on the PS2 (and I think in history, by default). Another amazing and curiously not very celebrated sandbox game is
Mercenaries: Playground of Destruction. Think GTA-meets-WAR.
- RPGs, you have
Final Fantasy X (and its sequel, and XII) and
Dragon Quest VIII: Journey of the Cursed King. KH is an action RPG, these are classy turn-based combat role playing games.
Tales of the Abyss is more action-oriented with its battle system and has an amazing, well-knit story, unlike the typically convoluted Final Fantasy plot or the overly simplistic Dragon Quest. If you prefer strategy RPGs,
Disgaa: Hour of Darkness is a good starting spot, too. On a similar note, I like to recommend anything developed by Atlus (
Persona 4, a great RPG) and Vanillaware Ltd. (
Odin Sphere, a 2D action RPG; and
GrimGrimoire, a 2D RTS).
- Rounding up, here's some other games I love on the PS2:
Killer7,
Katamari Damacy,
Prince of Persia: Sands of Time (and sequels),
Devil May Cry... the list goes on, really.
Happy gaming!
