The short answer is that you're right, there's no connection between lobsters and pies other than I find both entertaining, hence they were both included in the religion. From a canonical point of view they are beings created directly by the Pie to protect humanity and are somewhat similar to the function of angels in Christianity, except lobsters have mortal life-spans and many live on Mars.
