Eureka 7 opening "Days" (by FLOW) is definitely by far the most catchiest theme I have ever heard. Just listen to the beat and you will get hook!

I realise that even mentioning it in any anime discussion has become cliche, but for me Neon Genesis Evangelion is the winner of this thread. It is quite probably the most inappropriately cheerful song in existence, not at all helped by being a powerful ear worm. Behold:

Tabi no Tochuu from Spice and Wolf´s first season...I didn´t expect the song to stick in my head for 2 WEEKS and now I can even sing the Japanese version, without knowing any Japanese at all. I had to force it out with Heavy Metal...Also the ending theme...ENGRISH!
Also, NGE and Elfen Lied had pretty awesome themes.
