Well, because game developers have continued to do better and better jobs, slowly but surely improving the quality of our games. If I compare a sequel to its predecessor, why is that automatically nostalgia? Chances are that I actually liked the predecessor better because it worked better.

For example, a lot of people prefer Morrowind to Oblivion (even Vanilla) but I find the systems of Morrowind really archaic. using a short blade levels my speed stat? (no combat benefits to this what-so-ever) and casting the only damaging spells in the game (destruction) improves your will power (magic resistance) (not your total magic pool, which would allow for the use of better offensive spells) so the only way to get better destruction spells (that you can even cast) is to pick flowers and make potions! or to cast a completely different tree of magic! (summoning)! it truly makes no sense.
I do enjoy Morrowind still, hell I have the disc in my system right now. But I can safely say that Oblivion improved most of the problems of the previous game. Does that make Oblivion perfect? No and yes it did end up also lacking in other areas that Morrowind did well in, but for the most part gameplay was indeed improved and made more fluid, immersive and enjoyable for the majority of players.
