Parmesan is very nice, but only if you freshly grate (sp?) it. That canned stuff is bullshit.

I'm also partial to monteray jack, american, cheddar, and provolone (goes great with salami).

Burrata and brie.

I'm a fan of the more milky cheeses when it comes to fine cuisine, and yes I am American.

I'm sad to see the lack of burrata love on this page.

I love any kind of runny cheese. Even if I have to eat it with a spoon. ESPECIALLY if I have to eat it with a spoon.

On sandwiches, however, I tend to go for cheese that's been aged for a bit, just enough to add a slight edge to the flavour. Edam is great in this respect - the flavour is definitely more noticeable than ordinary, generic cheese, but doesn't steal the show from the ham and bread. And, of course, it's good to have one around if you suddenly need a cannonball!

I only use cheddar, I grate it finely over spaghetti bolognaise or lasagne. I hate that dry cheese which some people sprinkle over food, I can't remember what it's called but it tastes and smells like dried vomit.

I know there are a lot of Americans on the boards, and the USA has a reputation for being, shall we say, lacking in appreciation for cheese. Is this reputation deserved?
I don't know whether it's deserved or not, but they do use the phrase "cheese eating" as an insult towards the French...

How is that a good insult? French cheese is delicious and not the least bit plastic.

That being said, my favourite cheeses are British. I like a good strong Cheddar or Double Gloucester, but I also like the 'pudding cheeses' like Wensleydale with pieces of fruit, and Bowland, which is a delicious Lancashire with apple, sultanas and cinnamon. It's like a magnificent cheesy fruit cake.

Hmm, cheese, I love it. I think my favourite would have to be a simple brie, but... there's so much other good stuff... Roquefort if I'm feeling posh... a good swiss is really nice too.

One thing I really don't like, though, is cheese with fruit in it. I just really don't like the combination of sweet and savoury.

od, I love cheese. But I never get to try any cool and exotic cheeses. One time we went to the amish country, they had cheese stores. I was in fucking heaven on that trip.

Anyway, my favorites are
Smoked Gouda
Mozzerella
Meuster(I think thats how its spelled, its pronounced monster)
Chedder
This wine chedder cheese at the amish store. But it was expensive.
This garlic herb cheese, also at the amish store.
Parmesaen
Chicago cheese
Cottage cheese
Bleu cheese
I like all kinds of cheese basicly

Have you tried cheese with nuts in them? Those taste really good

Proper cheddar so long as it isn't a mild one (I love the "Cathedral City" brand in the UK). Decent cheese on a cracker or cheese on toast or mac cheese...heaven.

Parmesan is so great on pasta. It smells like puke but tastes so fantastic.

All mouldy cheeses are evil...
