Some of these are just because I like 'em, and some are because I think they have/are going to influence games to come.

1. Orange Box (that saved me some space on the list!)
2. FTL
3. Braid (there's no way this game and it's success haven't altered indie games)
4. Mirror's Edge (had its share of flaws, but I think we're going to see some more games in this vein as VR improves)
5. Natural Selection 2
6. Bioshock (not a big fan of the game itself, but great story)
7. Mass Effect series
8. XCom: Enemy Unknown
9. Starcraft 2
10. VVVVVV

In no particular order;

WWE 13
Rocksmith
Rock Band 3
Battlefield: Bad Company 2
UFC Undisputed 3
Call of Duty series
Frozen Synapse
Mortal Kombat
The Elder Scrolls games
Way of the Samurai 3

Those are the games I've had the most in this generation, with many, many others.

I feel like Earth Defense Force should be in there somewhere.

In no particular order.

Bioshock(surprised?)
Bioshock Infinite(Still surprised?... Really?)
XCOM Enemy Unknown
Mass Effect
Dragon Age: Origins
Portal
CoD 4(mostly for fond memories and that amazing post nuke scene)
World of Tanks(do weird MMOs count? I think weird MMOs count. The attention to detail and solid damage model are commendable... Also new and quite fun once you bridge the skill gap)
Guild Wars 2
Spec Ops: The Line

Other potentials

Medieval 2 Total War
FTL
Sword of the Stars: The Pit
Planetside 2
Dishonored
Assassin's Creed series(though none of them are as strong as the first entry, as far as letting you plan your own route, which was a lot of the fun)

Metal Gear Solid 4: Guns of the Patriots
Just Cause 2
Mass Effect 2
Skyrim
Metal Gear Rising: Revengance
League of Legends (though I doubt it's going anywhere anytime soon)
Portal

1) Rock Band
2) Diablo 3
3) Dragon Age: Origins
4) Metroid Prime 3
5) inFamous
6) StarCraft 2: Wings of Liberty
7) Dragon Age 2
8) Civilizations 5
9) Defense Grid
10) Puzzle Quest (Edit: Forgot this one, had to bump Borderlands from the list. I wish they'd make a AAA-RPG title out of this type of game. It's so fun.)

Honourable Mentions:
Borderlands
Street Fighter 4
Batman: Arkham Asylum
Mass Effect 2
Plants vs Zombies
Uncharted 2
inFamous 2

Greatest Disappointments/Least Favorites:
- Tales of Symphonia: Dawn of a New Age *shudder*
- GTA4 (Never understood all the perfect scores)
- Skyrim (Disappointment in that it gave me 60 hours of fun instead of 500+ like Oblivion)
- Legend of Zelda: Skyward Sword (Ruined by the imperfect controls)
- Resident Evil 5 (Bought a PS3 exclusively for this because of how great RE4 was)
- Resident Evil 6 (RE5 was a passable 'meh', RE6 is legitimately awful)
- L.A Noire (I appreciate that this game tries something new but it fails to provide an enjoyable video game experience)

7. Skyrim

1. Grand Theft Auto IV
2. Mass Effect
3. The Witcher 2: Assassin of Kings
4. Journey
5. Portal
6. Dark Souls
7. Assassin's Creed II
8. Metal Gear Solid 4
9. The Walking Dead
10. Minecraft

Honorable mentions:
Spec Ops: The Line, for being a great commentary on the state of the industry but not actually that much fun to play;
Shogun 2: Total War, or Medieval 2: Total War (which I think is just about this gen) - the ones in between were kind of a mess;
Lost Odyssey for being the best JRPG I've ever played, not included because I'm really not that into JRPGs;
The Stanley Parable is amazing, but it's a mod, not a full game, and more conceptual than based on actual gameplay;
'Don't take it personally, babe, it just ain't your story' and Katawa Shoujo were both great but I hesitate to call a visual novel a 'game'.

Note that this is me not trying to put more than one item from the same developer in - I would have included LA Noire and Red Dead Redemption, perhaps the other Mass Effects, maybe Portal 2, etc., but didn't want it to be just me fanboying over my favourite developers.

My favorite time-killers since quitting the life-nullifying WoW...

1. Borderlands 2
2. Skyrim
3. FallOut 3
4. Dragon Age 2
5. Dragon Age: Origins
6. BioShock Infinite
7. Borderlands
8. Saints Row: The Third
9. Warlock - Master of the Arcane
10. Torchlight or XCOM: Enemy Unknown (assuming I don't get bored with XCOM or TL2 mods don't suck me in)

Really almost scrapping the bottom of the barrel for the last few games on the list. And I'm NOT including the grand time-killers from PopCap (especially PvZ!) and Guitar Hero/ Rock Band games. Also have way too much time in Team Fortress 2 but not so much gaming as stress relieving.

There are so many games and I like so many of them for different reasons so I usually don't like listing favorites. I will try anyway. In no particular order:

InFamous
Metal Gear Rising: Revengence
Far Cry 3
Mass Effect trilogy
Portal 2
Pokemon Platinum
Fallout: New Vegas
Assassin's Creed: Brotherhood
Pokemon Soul Silver
Crysis 2

Well, might as well try to decide this, mind you I've spent the last 3 years broke and with little time to play games that I think might get into this list.

1. Fallout 3 (I bought is on both systems and the PC and easily clocked over 600 hours over all)
2. Saints Row the Third (I know many like 2 better, but I really do just like the pure insanity of it)
Infamous 2
3. Ratchet and Clank Future: A crack in time
4. Pinball FX 2
5. Little Big Planet 2
6. Viva Piñata (There just is something about this that is just simple fun)
7. Demon's Souls
8. Dead Rising 2: Off the Record
9. Dragon's Dogma
10. Borderlands

Not making the list but still are fun as hell include
Bioshock (and infinite, though I've still not played 2)
Skylanders
Rock Band 2 (Would be in the top 10, but since in my mind this starts with Guitar Hero, I tend to consider it part last gen, but so good it should be here some where)
Oblivion: Elder Scrolls 4
Mario Galaxy
Gears of War
Halo (any of them, they all feel the same to me, not that it's a bad thing... still haven't played 4 though it's on the shelf)
Prototype
Brutal Legend (I'm a bit of a metal head myself, How hasn't anyone made a game with a world like this before or since?)

Games that I've got and just haven't the time to play and have a feeling that might get to the list...
Dark Souls
Borderlands 2
Halo 4
Prototype 2
Darksiders 1+2
Gears of War 2+3
Skyrim: Elder Scrolls 5

There are others I'm likely not thinking of (mostly going by what I can see in my room, so some that my room mates have may have been missed)

1. Xenoblade Chronicles
2. BioShock
3. Fallout 3
4. The Elder Scrolls IV: Oblivion
5. S.T.A.L.K.E.R.: Shadow of Chernobyl
6. Civilization V
7. Super Mario Galaxy
8. Dragon Age: Origins
9. L.A. Noire
10. Call of Duty 4: Modern Warfare

I also have to give honorable mentions to Assassin's Creed, Super Meat Boy, Braid, and Metro 2033. Essentially, when I got to #9 and #10, it was really hard to determine which games should have gotten in as all of those are well-deserving of it. Also, I've been somewhat surprised how Xenoblade Chronicles actually will probably be my favorite of this generation. After playing BioShock, I was certain no game this generation would beat it, but I find that I have a much stronger attachment to Xenoblade than to BioShock. Not to mention, I never imagined my favorite would come from the Wii, which was a really disappointing console as a whole.

1. Battlefield: 2142 (Favorite series with the almighty Titan mode. Can't beat it.)
2. Borderlands 2 (Amazing Co-op, Handsome Jack is an awesome villain, large variety in enemies, LOOOOOT!!!)
3. The Elder Scrolls: Skyrim (Dragons, 'nuff said.)
4. Minecraft (Creativity and adventure all rolled into one? Yes, please.)
5. Uncharted 2: Among Thieves (Great story with a lot of fun gameplay)
6. Battlefield 3 (Single Player was shit. But the multiplayer has a lot of fun moments despite losing a lot of features and has the most varied and balanced maps of the series. Fuck Operation Metro, though)
7. The Legend of Zelda: Twilight Princess (pretty decent addition to my second favorite series)
8. God of War 3 (Pretty, great gameplay with a decent revenge story)
9. Gears of War 2 (Simply fun as all hell Co-op)
10. Battlefield: Bad Company 2 (Story not as good as the first, but the MP was pretty good for a Battlefield game)

Most Hated Game of the 7th Console Generation: The Legend of Zelda: Skyward Sword (There's an 85% chance that you wasted $60)

Seriously, fuck that game.

I'm not sure but I'll try to piece it together in no particular order

Mass Effect Franchise(think 2 is the most solidly put together experience)
Dragon Age: Origins
Orange Box(cause this is my list and I'll cheat if I want to)
Fallout 3
Civilization V
Alan Wake
Sam and Max Seasons 1-3(1 and 2 are by far better than 3 but they are a good bunch of games)
Borderlands(really like 2, but in all honesty at this point I've gotten more play out of the first one)
Portal 2
Left 4 Dead 2

Not the best but very very important to me: The Matrix Online
