These aren't in any particular order, just so you know.

1. Battlefield: Bad Company 2
Between the classes, the graphics, the available weaponry, the destructible environments, the vehicles and the squads, it is a great example of a variety of FPS concepts.

2. Dark Cloud
A fantastic RPG with quick to learn mechanics with a nice gameplay progresion (weapons, characters, towns, enemies, etc). It is a good introduction for the various advantages of ranged and melee combat in RPGs, the art style doesn't require fancy graphics, meaning it still looks fantastic despite being an early-era PS2 game, it introduces the concepts of elements, has survival mechanics that are easy to learn, yet spell horror if not adhered to (breaking a weapon is a horrible experience). It has the basics of every mechanic introduced fairly early, meaning it isn't one of those "10 hours in is when it really gets good" games. Overall it is offers a wide-variety of concepts, at an easy to learn pace while still managing to offer a fair deal of depth and strategy.

3. Golden Sun
Another RPG, this game introduces turn-based combat and multiple character management, setting a decent foundation for any later gaming-ventures someone may take into party-RPGs or RTSs. Also, it can be played well without an in-depth knowledge, but greatly benefits from experimentation and thoroughness, making it a good choice for long-time gamers and new-comers alike.

4. MarioKart (newer is probably better)
MarioKart.

5. ... Okay, let me think. I have FPS, RPG, Racing, an RPG that includes a tangent to RTS tactics because an RTS isn't exactly a genre that everyone should play, given the tendency for a horrifying difficulty curve ... ... what genre have I missed??? Platformer! That's what I missed! InFamous.
I know it isn't a platformer, but it is a Sandbox (which I missed), and it has climby-jumpiness, so it is sort of platformer-ish. Either way, a good game that introduces the Karma system, the third-person shooter, the 'skill screen' for buying abilities, the joy of side-missions, etc. So it does cover a lot of the bases I missed in some small way, and it is a good game in its own right (also a great example of what a super-hero game should be).

Games that every one must play?
1 Super mario bros (Believe it or not, five years later more than 3 million gamers would not know about mario)
2 Legend of zelda OoT
3 DOOM
4 Metroid
5 Pitfall

Now here are the five games that I believe everyone must play.
1 Thief
2 Chrono Trigger
3 E.T. (the game isn't that bad. In fact it is better than most of shit on Atari 2600)
4 Metal Gear Solid
5 X-Com Ufo Defense (just so that people are familiar with this thing and shun the reboot)

For me they would have to be
1) Half Life (1 & 2)
2) Super Mario Bros.
3) Any of the games made by Bethesda Softworks (basicly The Elder Scrolls series and Fallout 3)
4) Portal (at least the first one preferably both)
5) Psychonauts
6) Final Fantasy X

Had a hard time deciding between 5 & 6

In no particular order. I mean, no order with any relevance other than how I wrote them down:

1. Mario Kart. Easy and fun, gets the 'driving with a controller' skill down as well as a little multiplayer action.
2. Super Mario Bros. Great introduction to platforming, as well as developing the ability to 'explore' and try new things while looking for shortcuts or easter eggs.
3. Plants Vs. Zombies. Tower defense and planning ahead, an easy introduction for more Civ-type games later, as well as a time-related persistent aspect with the Zen Garden.
4. Portal. Great at developing spatial awareness and problem solving, as well as basic FPS skills without the need for continued twitch mechanics.
5. Half-Life. Memorable characters, tense FPS action at times without being completely overwhelming, good introduction to the way games can be a great mix of story and action.

Amnesia, Kingdom hearts, Timesplitters 2, Uncharted 2, Burnout 3.

The above list i specifically made varied, even though I love burnout 3, it wouldn't otherwise be on the list if I wasn't aiming to vary the titles among genre's.

But actually, put portal in there.

Top videogames everyone should play. I'm going to pick all the different genres I can think of, because people need to experience many different games imo.

N64 adventure (or whatever genre you call it) - Ocarina of Time. Interchangeable with Super Mario 64 or Banjo-Kazooie/Banjo-Tooie

Single player FPS - Half Life... 1, 2, or episode 2

Puzzle - Portal

Multiplayer FPS - TF2

Platforming - Super Mario World

RPG - Diablo 2 or Fallout, can't decide. Fallout more of an FPS I guess

Sim/Tycoon - Transport Tycoon

Racing - Mario Kart

RTS - Age of Empires/SC2, can't decide

Turn based strategy - Age of Wonders 2

I know opinions are opinions, but I'm bemused as to how so many people here label Modern Warfare as the pinnacle to shooters. Personally, I see MW as the McDonald's of shooters, i.e. its popular, addictive and gets the job done, but it no way classy or sophisticated.

Here's my list, but bear in mind that A. I'm only allowed five, and B. My choices may be slightly biased considering the generation that I am a part of and my personal preferences.

1. DOOM - revolutionised FPS games
2. Command & Conquer - Made RTS games very popular
3. Portal - Incredibly innovative
4. The Grand Theft Auto series - Proved that games can be successful despite massive controversy
5. Minecraft - Also incredibly innovative

There are a ton more that I'd put, but, alas, it had to be five.

We have very different ideas about how the word mature should be used.
Don't tell me you're one of those pretentious people who consider the Kingdom Hearts series as some of the most mature games this industry has to offer.

I'm not going to argue it since I don't see it as a position worth arguing, but I'll put it this way if you're having such problems with the term. The Witcher 2 makes the most of its mature rating out of any games out there. Without excess.
Nope, but I'm even more certain I am correct since you choose to be borderline insulting when your opinion was challenged.

Contrary to what the 14 year old out smoking on the street corner thinks, doing things normally seen as reserved for adults does not make one mature. It also takes knowing when and when not to do those things.

1. The Legend of Zelda. It's an all time classic that still has a feeling of adventure and epicness to it.

2. Doom. It started it all, and it still has its fun.

3. BioShock. It's one of the greatest shooters I have ever played, the setting is wonderful, the characters are unique, and the message is clear.

4. Super Smash Bros. 64. It's a lot of fun, plus what could be better than beating the crap out of each other with Nintendo characters?

5. Super Mario World. It will go down in history as one of the all time greatest games.
