The only one I can think of right now is Code Geass. The dubbing for it isn't too bad either, if you're not a sub person.

I recommend Seto no Hanayome, no ecchi, only humor, although it's a bit over the top from time to time

Monster: Slow pace, though I don't mind, and lip sync could be better, but story beyond HFS!! and some nice climaxes along the line. (Pluto, 20th Century Boys and Billy Bat of comparable quality, though have not been animated).

Tengen Toppa Gurren Lagann: If you like blazing mecha-action (especially the conclusion), preposterous amounts of fanservice and hotheaded characters, this is the one.

Berserk: I thought it was good. Don't know a good way to describe it though. Note: the anime is only the flashback arc from the manga. The anime is not as graphic as Elfen Lied, but the manga is a hell of a lot more.

Bakeneko (Ayakashi) & Mononoke (spin-off of Bakeneko): An apothecer/medicine seller travels the land, vanquishing demons and 'evil' spirits. Suspense and creepyness in almost perfect porportions, not to mention some very well written backstories for the spirits. At times very confusing.

Just that they give a bit of consideration to what i said i like. I mean, if your friend wants to go do something and they hate/fear animals, you don't suggest going to the zoo do you?

Trinity Blood - Vampires, the Pope, Bible references. Even though I am not a religious person, this anime is very good. Bad ending but funny and good.

Black Heaven - I haven't watched it all the way but from what my friend told me, it is about a guy who used to be in a band and uses his music to fight aliens.

Chobits - About a robot that has a mind of her own. Very cute and very funny.

Zoids - An oldie but still on of my absolute favorites. Its about robots that look like animals that are made for the purpose of battling in sport-type event battles. It got me to love anime.

As several people have mentioned, Cowboy Bebop. Ghost in the Shell: Stand Alone Complex has a very good story, and I thought Planetes wasn't half bad.

And I'll mention Gundam (particularly Gundam 0083), not because it is good or has any decent story, but just because I always mention it :)...

Check out the older Gundam Series.
Claymore is pretty interesting (13 episodes I think? The manga is ongoing, but updated monthly.)
Berserk (Same as Claymore)
Aoi Hana (Its light, slice of life, but its Shoujo-Ai. Its also ongoing, the anime has 11 episodes and the Manga is at vol. 3 or so as far as translations go.)
Revolutionary Girl Utena (Its kind of corny, imo, but its got a lot of deep stuff towards mid-series that just caught me off guard)

Fullmetal Alchemist is the best anime I've ever seen by a long, long way. It, as snooty critics tend to say, transcends the genre. But I suppose everyone's seen that. Death Note is great as well.

Well you're missing two fantastic ones right off the bat: Full Metal Alchemist and Death Note. Full Metal Alchemist is a fantastic steampunk fantasy about the bond between two brothers who lost everything and left what little they had left. With great characters, an interesting story, and many intensely heartfelt emotional moments, it's easily one of my favorites.

Death Note is a psychological thriller about a young supergenius who gains the power to kill simply by picturing someone's face and writing their name in a notebook. The plot revolves around the psychological battle between him and another supergenius who is called in to find him and bring him to justice. One of the most intelligent and trippy shows I've ever seen.

One more: this one may be a bit out of your genre, but it's amazing nonetheless. Clannad is an anime based off the popular Japanese visual novel of the same name. It's a romance/comedy/drama show: if you're familiar with anime genres, it could be considered slice of life and harem. It (and its sequel series, Clannad After Story) has many genuinely funny moments and reaches countless emotional highs and lows. I spent about the last half of After Story in tears: and I don't easily cry in movies. Highly, highly recommended.

Black Lagoon - The story follows a team of pirates/mercenaries known as Lagoon Company, who smuggle goods in and around the seas of Southeast Asia in the late 1990s/early 2000s. Their base of operations is located in the fictional city of Roanapur in Thailand, and they transport goods in the 80-foot Elco-type PT boat Black Lagoon. When on land, they move around and conduct business using Benny's 1968 Plymouth Road Runner. Lagoon Company does business with various clients, but has a particularly friendly relationship with the Russian crime syndicate Hotel Moscow. The team takes on a variety of missions?which may involve violent firefights, hand-to-hand combat, and nautical battles?in various Southeast Asian locations and when not doing much, the members of the Lagoon Company spend much of their down time at The Yellow Flag, a bar in Roanapur. < Ripped from Wikipedia

The story can get a bit dark and a particular pair of characters are a tad twisted. Overall it's got a good mix of action, comedy and storyline in my opinion. It's not complete though, with the long awaited 3rd series (in form of OVA's I think) due to come out next year.

Death Note- Light Yagami, a normal student, finds a notebook that allows him to kill anyone he wants by writing their names in it. After murdering people, a detective named L is called in to find the murderer. The story revolves around Light Yagami murdering people while trying to beat L t his game.

The Melancholy of Haruhi Suzumiya- Essentially, a girl named Haruhi Suzumiya has the power to alter reality but she doesn't know that. She forms a club called the SOS brigade and unknowingly recruits an ESPer, time traveler and alien. The story is seen from the point of view of Kyon, the one normal guy in the club with no abnormal powers or hidden agendas. It's hard to give a synopsis of the story as it takes place over 9 light novels with a tenth in production but most of the novels are Kyon and the rest of the members having to deal with Haruhi's reality altering abilities and keeping her happy. The anime is a series of episodes of several events taken from different points in the novels.

FLCL- No description is needed for this one right?

Whatever you do watch, make sure its subs and not dubs. Also, please don't watch it on streaming sites. You are missing out on all the work animators put into anime. Either buy the DVDs or torrent it.

I would suggest d gray man it may start out a bit slow and boring but if you give it some time. It becomes quite good with a great story and likeable characters. or if you want to laugh then ghost stories is a good choice I was in hysterics within the first two episodes.

I see why you do it, but going by your list, you seem to have similar tastes to a lot of folks here, so the same things do get recommended time and time again you see.
I'll agree that Full Metal Alchemist seems something you might enjoy, though it is rather bleak in places. Have you tried the Studio Ghibli films? You might enjoy some of those.
Everyone has such varied specifics it's hard to know what to suggest. If it's the violence that puts you off Hellsing then that might limit your choices.
