It seems all the memorable game music for me goes back a bit. Megaman 2 on the NES for sure. Castlevania: Symphony of the Night on the PSOne set the bar really high, and few games can touch it. Oh, and definitely the original Medal of Honor games, which perfectly captured the spirit of classic WWII films and launched Michael Giacchino's career as a sought-after soundtrack composer (Alias, Lost, The Incredibles).

Arcanum: Of Steamworks and Magic Obscura's soundtrack was very unique and cool too.

Final Fantasy Tactics -For every situation, there was a stunning musical cue. Even the music for standard, non-mandatory battles was randomized.

Crash Bandicoot: Warped - My favorite entry in the Crash franchise for a few reasons, the main one being it's fantastic soundtrack. It's a bit generic at times, but the boss themes were amazing.

Pikmin - Every song managed to capture the feeling of exploring a strange new world full of treasures and perils alike. I always liked the way the music would segue seamlessly into a more harsh, urgent rendition of itself when you entered battle, and a quiet, softer rendition when it was almost sundown.

Super Metroid - Unlike the original Metroid's soundtrack, this one really hammered in the fact that you were just one person, alone, on a dark, gloomy planet full of space pirates out for your blood. It was not a situation to be taken lightly, and the music of each zone reflected that.

The Legend of Zelda: A Link to the Past - Aside from the four themes you'll be hearing more than any other throughout the game (Overworld, Dungeon, Dark World, Dark Dungeon), the game was filled with memorable bits of music that I'll always remember vividly, like the Fortune Teller's theme, The Guessing Game House's theme, the now standard Kakariko Village theme, and of course, the iconic Master Sword jingle.

...and the best game ever in every possible category award once again goes to Braid.

Also, the first Stronghold had some nice music.

Shadow of the colossus...

it's haunting orchestral numbers are the best I've heard in any game I've played

ANYTHING from devil may cry

and in prince of persia warrior within when you're getting chased by that big black thing and the "i stand alone" instrumental by godsmack starts playing

also shadow of the collossus had some epic stuff

Final Fantasy can be a polarizing series, in that everyone has a different favorite. However, even someone who hates the games must concede that its music is consistently phenomenal.

Shadow of the Colossus had amazing music.
God of War's is pretty good.
MGS series always has great music.
Castelevania has fantastic music too. The remake on the PSP (Dracula X Chronicles) has some of the best music I've heard in a game.
Oh and Bionic Commando Rearmed is another with excellent music.

Well the obvious answer is teh Haloz but I'd say for In-game (no cutscenes or menus) Call of Duty 3 is tops.

Legend of Zelda Ocarina of Time, Fable 2, and Shadow of the Colossus. The music in Shadow of the Colossus made you feel like you were some awesome giant slaying person, o wait you were (if you beat the game). The timing for the music was great.

Halo 3 music. Specifically, whenever you're driving the warthog, like at the end. The warthog music destroys all other pleasant sounds!
