Ask him politely if I could have another few days to finish up. If he says no then fair enough, I'll go willingly.
I would totally challenge him to a game of mario kart. Not because I dont want to die but because that is simply the most awesome thing ever. Once you've played mario kart with death your life is complete. Then I would see if he could beat chuck norris in a fight.
I would ask the cause/reason of my death, as I'm quite certain I'm alive and well right now. Got no problem with dying, everyone has to die eventually, but I'd like a little justification for apparenlty leaving before my time.

Id pull out my little skeleton grim reaper mouse and start stroking it and say "Hello me" and confuse the crap out of him, assuming its the discworld Death (hes awesome)
I'd probably fight Death to the death. But only because the longer I lasted, the more incredibly badass I'd have been. I need to leave behind something.
I'd ask to be his apprentice or something. If he declines? Look for an opening to grab his scythe and BAM!

I'd try to strike up a conversation. Asking where various people went, where I'm going to go, and stuff like that. Also ask who his most interesting kill was. Ask if Hitler did in fact commit suicide and not run off to South America, who assassinated Kennedy, yeah I think it would be interesting.
I'd then try to calmly (note the word is try) ask Death for an extention on my loan of life. I have a gf to marry and have kids and grow old with. XD

Well first I want proof if he is the real thing and doesn't invole with him/ her torching me. If he is the real thing I would ask death if he want some tea and also ask him/ her to give me enough time to write out my will quickly.
