That's assuming you can counter those combos consistently.
That's not a really great assumption on your part... every fighting game has some sort of counter mechanic that can even the playing field:
Soul Calibur has "Guard Impact". Street Fighter has "Just Defense" and "Parrying". Mortal Kombat has "Breakers". Guilty Gear has "Dead Angle Attacks" and "Roman Cancels", as well as character-specific counters. Melty Blood has "(EX-)Shielding", "Clashing", "Shield Counters", "Last Arcs" and a lot more... and these are all just examples...
...most of which are extremely easy to do, some with a bit of practice beforehand. Complaining that it's "too hard" or "assuming you can do them" is kind of biased, no? Have you practiced these general anti-attack techniques? If you're complaining about one highly important aspect of a game, why are you even bothering to play it when it has to be exploited at times to win?
If you can't do something, why bother doing anything?
