I am disappoint Escapist. How could you forget Doom and Duke Nukem 3D? Catherine's final boss level is tense as FUCK. Also, if I may make a prediction I would say that Asura's Wrath will have amazingly ridiculous boss battles.

Bayonetta had some fucking SWEET boss battles that took up entire levels, were tough and challenging but never unfair, and fucking varied as hell and ALWAYS fun to replay through. AND mid-boss checkpoints. Thank God for mid-boss checkpoints.
Ditto, the boss Fortitudo is my favourite. Being able to reverse time is what makes it fun for me.

Final Fantasy 8 had some good boss fights. Omega was a toughie, but I loved it.

Mischief Makers had some pretty intense boss battles. Winning them took a hell of an effort for me.

Also, I love the intros to them. EDIT: (THROUGH FIRE, JUSTICE IS SERVED!... CERBERUS ALPHA!)

The problem most people had with those fights wasn't that they couldn't be skipped over. It was that they are unbalanced and un-neccesary. "Fleshman" (?) had a plasma rifle that could very nearly insta-kill you. Yet when you use the exact weapon, it is barely stronger than the assault rifle.

The ones in Vanquish. They'll show you where the weakness is but even then, its still really tough to kill the bosses (Totally trolling. I love it)

SKYIRM!
Lol just kidding that was too easy even on master
I liked the crash bandicoot way of fighting bosses, where you have to do certain things and such
Also the Elite 4 leading up to the head guy in Pokemon

I had a lot of fun with Tali's loyalty mission in Mass Effect 2 (the boss being a giant Geth) when I was playing as Infiltrator on highest difficulty setting. But it would've been frustrating to kill it if I didn't bring Legion with me.

Interestingly enough I've been playing the Jedi Knight games recently. Lightsaber duels are immensely fun in the latter two games, especially when they become very intense and fast-paced. I haven't had so much fun in ages.

Some of Dragon Age's are great. The Archdemon is a BLAST to fight, and so is the Ancient Rock Wraith from DA2.
I agree with the wraith - that was tense. But the Archdemon? A slugging fest - I got very bored of that fight, very quickly.

Mr. Freeze

Just... so... good.
I'd have to agree - a boss fight that got you to be creative with the game's mechanics. I enjoyed that one a lot.

Max Payne 2's was legendary.
The last one? Really? It was alright, but that's as far as I'd say for it. There was nothing that really stood out.

Metal Slug (on PS1) was epic.
I've always enjoyed the Metal Slug boss fights, especially the ones where the boss (especially if mechanic) degrades constantly as you attack it.

Funny noobs.
I think it's going a bit far to call people noobs for thinking the boss fights weren't well done. None of them particularly stood out to me for one, though I did like the setting for the second-last one.

I would also say that they weren't the right kind of challenging. I like bosses that require effort to defeat, but these kept requiring brute force more than anything else. It wasn't challenging, it was "how many bullets can this guy soak up before they die?" For the first I just fired rockets at them and tried to blow them up as much as possible. For the second, I sprayed bullets, same with the third. At the same time people playing a Dues Ex game prefer something that involve you defeating the boss by exploring alternative options, for instance the way you can defeat Navarre and Gunther Hermann.

I used to keep replaying all the boss fights of Crash Bandicoot 3 - I really enjoyed them. Not sure if I still would now since it's been so long, but I always enjoyed fighting N. Gin.

Castlevania: Lords of Shadow!

Lots of variety in the bosses, big, small, vampires, werewolves, weird shovel guys. You name it.

Sonic Generations, hands down. Particularly the rival duels. Metal Sonic isn't as teeth-grindingly infuriating as in Sonic CD, the battle with Shadow has epic music switches, and Silver's... well, let's just say it far from sucks this time around.

For me it's Atelier Iris 3, with the battle against the Final Boss and another battle against Ash rating the highest. The Ash battle is exceptionally droolworthy.

KotOR II -- Darth Sion
Dragon Age: Origins -- Archdemon

Epic battles, Sion cause it's as much psychology as actual fighting, Archdemon cause that's a bloody hard fight!
