Just kidding! I've got to go with the Archdemon from Dragon Age. I died seven times ON EASY DIFFICULTY before I finally killed the bastard. Although I didn't know I could call in reinforcements, and I forgot to kill one of the generals.
In a rare moment, I couldn't find myself caring enough to get that far in DAO, but, I did watch my GF suffer through until finally giving up on him.

Yeah, the final boss in ME2 isn't hard, but it is
very annoying. Even with the particle beam he bounces around so much it's a pain to draw a bead on him. My first play through as a soldier I used the Adrenaline bullet time to take him down, but, yeah, major BS.
As for me, I'd go with the Titan at the end of Titan Quest. Oh god, it's not even hard, it's just pure BS. His hits were near instakills against my Conquerer (Defense/War), and I couldn't get close enough to hurt him. I tried taking him out with a ranger, and burned, seriously four hours of nothing but kiting him around and taking potshots, and if you're not careful, he'll hit these columns that heal and BUFF him. On top of that he's got a vampiric attack, and absurd hit points. Originally you could get him to take out the columns weakening him, but by the time I was fighting him, the expansion was out and he had been buffed further by the devs... gah.
