Well if I had my choice, I always wanted to be wandering gunslinger, travelling from town to town challenging other gunslingers to duels and earning my way from random oddjobs here and there.
More realistically, I'd probably be very dead or maybe a ghoul, since there's no mention of any Vaults in scandinavia...

I'd probably fix some crazy vault that has been overrun by dwellers with some experiment and use it for my personal lair, then grab some women and live like a king in my own little kingdom under the ground.

I'd be some kind of gatherer, so travelling merchant I guess. Although I'd demand nothing in return. I'd find what I can and giving it to those who need it most, keeping only what I need to stay relatively healthy and well-equipped enough to survive.

Also I'd try to seek out new places to establish settlements and through my services help to expand and develop existing ones.

I would travel from the white cliffs of Dover to the torrential downpours of Edinburgh, selling Tea and the occasional biscuit to those who would like some. I would also use a fist weapon for each hand. Giant mechanical gloves holding a cup of tea... awesome!

But for serious... realistically, probably just try to find a settlement and hold out there. Wandering the wasteland seems like fun until you realize how quickly a super mutant with a mini-gun ends those dreams of exploring.
