Taking this question totally seriously, here's what I would do.
1 - Get a Machop. I wouldn't catch him, we'd just become total bros as soon as we met.
2 - Go on adventures, get a Skarmory egg and hatch it.
3 - Fly around on Skarmory getting rare pokemon
4 - OPEN A SAFARI PARK. Seriously this would be so fun. No battling or imprisoning or anything, you just have a buttload of awesome pokemon living in this big place and they get to beat up the stupid trainers that try to catch them.
5 - Travel the world for rare/endangered pokemon and bring them to my park.
6 - ???

Start a campaign to halt the organized subjugation and weaponization of domesticated pocket monsters.

I'm pretty sure everyone would die. We would no longer be at the top of the food chain, due to the Pokemon having superior mental abilities than we do.
The sentient psychic pokemon, such as Mewtwo and such would take our place as the top of the food chain. We'd become squandering apes of the world, living in primitive buildings to such a higher power.
We'd also have many more deaths in the world due to angry, wild pokemon. Fires, storms, earthquakes would go on everywhere. Mass chaos would surely ensue. You'd have to constantly contest pokemon for territory; though it would be hard for some pokemon have great defenses that could surely shrug off our bullets. Lightning storms would interrupt our technological advancements, leaving up hopelessly outmatched while the psychic beings watched from above. Building. New cities would be made above the ground, with barriers to keep out any wild flying pokemon.
It would probably suck balls, and we'd die.

I would try eating a slowpoke tail and see what all the rage is about them.
I would also catch a Gyarados as my main pokemon and one of every of Eevee's evolutions, with a plain Eevee also.

Because Pokemon get off on fighting, they're like tiny fire-breathing Predators. The fact that they obey you as soon as they're sucked into the ball, questionable. But I think it's said that they're hard to catch because they only want to work with worthy trainers.Brainpaint said:

I would have blazeken ludicolo and that weird fossil pokemon with scythes for hands (kabutops). I would be an assassin for higher, I would have ludicolo spray water on my hits to disorientate them, then have kabutops cut them up, and then have blazeken burn down the entire building and eliminate all of the muscle that my hit may have. In all seriousness, when you think about it, no-one could survive in a world that is pokeuniverse. But it's fun to think about what would happen if all that stuff did not happen.
I'd just be a trainer. What could be better than that? You get free room and board at Pokemon Centers (at least you would in the anime) not to mention universal health care, you get to leave home and travel the world at age TEN, and use your team of Pokemon to beat up other people's Pokemon and take their money.
Also being a gym leader must suck, especially the early ones. You're stuck there with your level 10 Pokemon who exist to get their asses handed to them by starters.

well considering most people in that universe never age. i would probally spend a decade perfecting the ultimate team (must include mewtwo), then i will amass a couple trillion pokedollars over the next couple of years and then i will take over the Hoenen region and then make it the best world power. finally i would settle down on a giant fortress i built on top of the big volcanoe
