Company of Heroes is a win for RTS games. WW2 usually interests everyone, and the basebuilding is really simple in it.
CoD5 and Nazi Zombies is fun in the smaller hours.
UT3 and UT2K4 have been pretty popular within my LAN buddies. Not a great fan myself though.
AvP2 used to be creamworthy. Sadly enough the game is a bit outdated nowadays to actually get a real scare out of. Back in the days, every marine player in the room would burst to tears of fear, atleast once.
Make sure everyone's comfortable with piracy. There's no way in hell a room full of people are going to have all the different games bought, just out of coincidence.
Make sure to play the RTS games, and games you need to be focused in, early on. After 6am, everyone's going to be so damn tired, they won't have the energy to play starcraft, but suddenly Call of Juarez II seems like the greatest thing on earth. So bad it's good.
Beer/pot makes everything better, except intercourse, but since it's a school, I don't think you can have any of the former, and since it's a LAN party, I'm guessing you won't have any of the latter either.
All my LAN memories are pretty much inside jokes, you wouldn't get them, so I won't share them.
