The phrase is contradictory because once you eat the cake you no longer have it, so having your cake and eating it isn't about a sequence of events, it's about trying to do both at the same time. Basically you want to have a piece of cake and eat it but still have the same cake you just ate to eat again in the future.
It's a bit of an odd phrase, but its basically used for people that want to try and have something both ways when its impossible, usually as an attempt to avoid the consequences of their action i.e you can't have a piece of cake, eat it, and then still have that same piece of cake.
Generally applied to the concept of grey Jedi because the way some of them are written its basically an excuse to give a light side Jedi dark side powers like force lightning, and allowing them to do anything a jedi or sith can do with none of the effects of dark side corruption or self-control that's required of regular Jedi, some view it as kind of a cop-out as, written poorly, it has all of the benefits of both sides of the force, and none of the downsides.
