As someone who most would consider to be a pretty hardcore fighting game fan.. I totally approve of this idea.

Easy Mode players will have one button access to normal moves, special moves and supers BUT the moves they do have access to will be extremely limited compared to someone who uses standard mode. For a quick example, in standard mode you'll have 3 different fireball variants, in easy mode you'll have one.
Basically, Easy mode is about two things. First, it allows new or lesser skilled players actually be able to jump into the game and do something. Most of Capcom's fighters have never been masher friendly so this opens the doors to them without giving them anything even close to an advantage. Secondly, it puts the focus on timing of moves instead of move execution. Pros already know how to do whatever move they want and when to do it but a simple control system will let newer players focus on choosing when to do the moves they now have access to instead of having to worry about doing the move without screwing it up.
Overall Easy mode is definitely both crutch and learning tool but has very significant drawbacks that will keep it from ever being broken in even reasonably skilled play (unlike EO mode in CvS2 which was totally broken if you had half a brain).
