Why would anyone do that?

That's like somebody saying "Hey! Here's a version of the game with like, 10% of the content, runs worse, less view distance and basically inferior in ever way, or there's this version with pretty much unlimited stuff to do".

And then going "Oh boy, I love inferior versions, I'll defend it to the death despite it obviously being less of a thing in every discernible way!".

Like, logic, you know?

You really can't wrap your head around successful console versions of games? As I said previously, plenty of posts here alone telling you why the console versions were bought.
Not everyone cares that there is a shinier version, the success of consoles alone should illuminate you on that.

But, it's just worse. Are these people just uninformed about how much better the PC version is?

The first conclusion to be drawn from this is that Minecraft as a whole sells really, really well.

Beyond that, might as well offer my own commentary, having owned the 360 version for a while before getting the PC version (never had a computer that I thought could run it, then never had money I could easily use to buy things online). The main advantage of the console version is simply that it's much easier to play with just the people you want to play with, when you want to play with them. After getting back from college, where a group of friends and I was able to play together on a local connection, we've had to jump through tons of hoops trying to get an online server working so that we could all still play together. It's finally starting to come together now, a full two months later. With the 360, so long as you had Live already (which most console players do, I'd wager, especially on the Xbox side), it's piss-easy to just jump into someone's personal world to play with them. So basically, console Minecraft works for the same reason that console games in general are still pretty popular - they're just less hassle for the technologically-challenged.

(That said, that is literally the only thing console Minecraft has in its favor over PC Minecraft. Since I bought the latter, I've only gone back to the former once, and found myself severely underwhelmed.)
