If you want to see Minecraft with 'better' graphics then just look at FortressCraft since they are pretty much the same graphics-wise just with one being pixel-punk and the other being 'realistic'. I actually prefer the 'blocky' nature of Minecraft because it is stylised like TF2, If you see a screenshot of an enemy/npc/item then you know it is Micecraft because that is the style Notch used. Take a 'realistic' game like a shooter and they all look pretty much the same, not just because of the extensive use of brown and grey but by aiming at realism you end up joining a big group of developers who wanted the same art style, so it all looks homogenous.
