The only health warnings I've ever listened to are World of Warcraft ("Oh hey, I have been on for a couple of hours now, I should stop"), and Wii Sports/Resort.
Granted, I only started listening to those last ones after I wound up feeling like someone clamped a vice on my shoulder for a week after a couple straight hours of boxing/swordplay...

gaming warnings aren't those in the front page of the game manuel. No one reads the manuel.

I know the risks of carpal tunnel and such, and I take measures to avoid them. Beyond that, I've been reading in dim light since I was 3, and I've never had eye problems: even my optometrist said most of the crap they say about how you can blind yourself is stupid. And I don't have epilepsy, so no worries about that...

I like unobstrusive ones.
I remember Anno 1701 would occasionally have a little information icon on the side that would say "You've been playing ANNO for 2 hours" and the announcer asks "Don't you think you need a rest?"
I found that very German, and quite nice. I thought "Yes, kind man, I SHALL have a nap!" and I did, and all was well

I've never had any problems before, so why should I fear just magically going into an epileptic shock as of today?

I never really have followed anything I was told to do in these little warnings. I've been gaming for a fairly long time and I'm in good health so far. I suppose its just to encourage the impressionable people to follow "healthy" gaming sessions otherwise I just don't see the point unless there was law written somewhere that it has to be printed somewhere.
