Generally, if the class requires metal armour or "tinkering" of some sort (the fighter, the paladin, the alchemist, the gadgeteer, whatever the game offers) my ingame avatar will be male. If it emphasises agility (ninja, thief, monk, ranger) it'll be female. For druids, priests and magi, it's about a 50/50 split depending on my mood. Finally, regardless of what she's wearing, if she wields a bow, she's a she.
This isn't me consciously setting down any rules, of course; it's just what a moment's thought and thinking about all my past characters (and there are a lot of them) has revealed to me. In Pen and Paper RPGs, I'm always male though.
This is, of course, assuming the genders are equal in terms of abilities. I mean, I'm not going to refuse the chance to be a cool class just because boobs are a prerequisite.

Actually I thought I would mention that whenever possible I play an Ambiguously Gendered Character.
If I can put enough Armor on that you seriously can't tell what my gender is I am happy. It's fun to confuse people by using a character that no one can get a read on.
Haha. I do this sometimes. Not on purpose, I just love being an elf with a long ponytail.
