I find a light cooking helps the meat flavour come to its rightful position. Not too much, though, I'd say medium rare. It all depends on the meat of course; entrecôte could easily handle as much as medium without losing its taste due to the fat marbling the flesh.

Oh, and if it's slightly crispy in the edges, I'm one happy guy at the table.

Anything more than med.-rare is overcooked.

My wife's family (immigrants) used to go to "shoe-leather" (aka well-done). My wife is finding out that steak and pork chops are actually really good when cooked properly. ;-)

My preference varies with the quality of the meat oftentimes i take it well done unless its an exeptional beef.
