I'm currently playing a Dark Elf paladin:
Blade, Restoration, Block, Heavy Armour, Alteration, Armourer, Athletics.

I played a thief - worse fewking decision ever!

Having spent an age painstakingly pick-pocketing, thieving and burglarizing my way through the entire city I turned around to see a friend -who'd started at the same time as me, picked a warrior and gone dungeon crawling- had about 10x as much money as me + an unbreakable lock-pick...

I generally play a sneak character with medium armor, and long blade/blunt weapons skills. Give me a chance to be a real necromancer, and I would be mage all the way

yeah I like to be able to do all things. Also im like the only person I know of that actually likes that the game gives you the opportunity to do everything.
That being said I do always tend to fall back on being a general sneaky bastard.

I'm mostly a melee fighter, but I tend to use a bow until they close the gap and I then I unleash holy hell upon them (most don't get that close anymore though). And I love sneaking around (I think I made Sneak a major skill and am now a master of it) and one-hitting people who don't see me coming. Makes the game stupidly easy, especially when exploring caves

About the only magic that I use anymore is a healing spell if I REALLY need it or the random cold/lightning touch spell if I want to end a fight quickly. Mostly I can just walk about and let people kill themselves by hitting me, since I have resistance to normal weapons and a crap ton of damage reflect.

And I can damn near jump over a house from a standing position. Anyway, the upside is nightvision racial bonus. Plus, you get a water breathing necklace from one of the DB quests, so I don't have to play an Argonian (ugh, just me).

And then Vampirism. Life Detect, 100 feet, 30 sec. Makes dungeon crawling a breeze. Of course, at some point, I'll have to do the quest to get rid of it.

Sidenote: I wonder if Lycanthropy is coming back in Skyrim? It was an option in Daggerfall, not sure about Morrowind, and not in Oblivion.
It was in the Bloodmoon expansion of Morrowind, and it was awesome

Custom all the way.

One armour skill, blade, marksman, sneak, security, and the rest in magic fields (illusion and another one). I master sneak and marksman so I can bring anything that doesn't see me down with 1 hit, and then finish him off (if he isn't already dead) with a spell/another arrow/melee strike.

I break in dungeons or caves, murder everyone inside silently while invisible/chameleon and return home with all the loot (some of the times I don't even need to enter melee or be discovered).

I usually go for light armour because of my terrible disease called chronic encumberance. :p
