I think I heard somewhere that most people choose "Rock" to start with because the closed fist is a subconscience sign of power. Probably bogus but interesting enough.
Because people have perceived success with one of three. So if you win with a scissors, you are much more likely to use scissors again later, in a completely different game. Also, a friend of mine and I invented a musical version. Rock (metal horns) vs. jazz (jazz hands) vs. classical (pretend to conduct with your fingers). Rock beats jazz, jazz beats classical, classical beats rock.
