For me I'm mostly ok with spiders except the really big ones. And I probably would have a panic attack if one dropped from the ceiling. Fortunately that hasn't happened yet

I've had problems with most enemies, but the one that stands out are humanoids, mainly because they just refuse to obey the laws of physics sometimes and arrows pass clean through them! I've had similar problems with Dwemer spiders, so it may be an archery thing.

Oh and Draugr Death Overlords can go and die in a ditch; first one I met took like ten arrows, of which 3 were sneak attacks. Also, some of the bigger Draugr also have extremely cheap tactics which you can't defeat, usually involving shouts which they can spam much faster than your; anyone who's done the Gauldur Amulet quest (forget the name) may have encountered the situation where at the end, the second brother is unbeatable because he and his clones keep Unrelenting Force-ing you into a wall or something while they riddle you full of arrows, whereas if you stand at range, they incessantly knock your bow out of your hands.

And why the heck are spiders more fire-resistant than bears? I've found the spiders can take a full Magicka bar of flames, whereas a bear cannot.

I hate those sabre tooth fucking tigers, they come out of no where, you can be just walking along calmly then a giant cat jumps out a bush takes half your health in one hit then chases you, is faster than you and takes about 2% of its health off when you hit it! Needless to say I dont travel by Winterhold anymore.

Used to be Spiders. I am arachnophobia and not to long ago I just ended up fire balling from across rooms. Then I decided to hit one with my electrified mace and you'd be surprised how therapeutic it is toward my fear of them.
Still creeped out by the eggs and webs that accompany them though.
Also starting to get scare of Chaurus. Creepy little clicky death beetles.

On another but similar note, Slaughterfish. I hate creatures in water. I've seen one so I know they exist but now I'm really wary of every single body of water in the game.

Nothing annoys me for being to powerful. It just makes it feels all the better when I finly stab them with my duel Ebony Blades.

It's really just one instance but I hate those wisp things in that one College of Winterhold quest, the part where you have to fight like 20 of them.

I've always hated dealing with magic users like necromancers. Especially when I go up against a boss one. Although they seem to be less and less of an issue now that I've been properly using my wards to charge through their magical onslaught and then beat the crap out of them with my melee weapons.

3rd most frustrating are Dwarven constructs. They can take a shit load of damage and they just do not let up due to feeling no pain.

2nd most frustrating would be be the Ice Wraiths. Fast, almost impossible to see and they fuck you up in seconds.

But without doubt, the most fist clenching, teeth grinding, controller throwing banes of my life in that game are the mother. Fucking. FROST TROLLS! They kill you in about three hits, they run faster than you, they can take shit loads of damage and it's no use attacking them from range with your bow because their health regenerates.

The most frustrating moment in the whole game is when you escape the Thalmor embassy thinking you've just owned it, only to find yourself trapped in a very confined space with a Frost Troll. He must have fucked me up about a hundred times before I beat him by the skin of my teeth.

The BUUUUUUUGS they are everywhere man! I spam the flames to burn aware the fear, BUT I DON'T DO DESTRUCTION, nothing happens as more and more pile onto my corpse as I am slowly burn with my blood being replaced with poison. I struggle as the webs tighten, breaking my ribs. THE BUUUUUUUUUUUUUUUGS

Ice wraiths. They're a ***** to hit because they move strange and they leave a trail that looks just like the actual creature, which makes it hard to know where they are.

Gotta say, I'm surprised the Falmer and their accompanying Chaurus didn't get their own option.

I fuggin' hate the Falmer so much! I hate the fact that they're blind, yet they seem to be able to see me, even though I've got 100 Sneak and a bunch of the associated perks, and am crouched motionless in complete darkness. (I know they're supposed to have heightened senses of smell and sound, but the game doesn't actually register detection based on smell, and like I said I'm completely motionless) I also hate the fact that when I was at a lower level, trying to do the main quest, I had to crawl on my stomach through a HUGE Falmer-infested ruin at a snail's pace because at the level I was at it would literally take 4-5 hits from any Falmer and I was dead, which led to me leaving the ruin, levelling up a few times, then having to do the whole sodding dungeon again with even higher-level Falmer in my way!

Also, a special mention goes to any mage-type enemy who uses a Ward spell. I usually open a battle with one of my shouts, so having that blocked then having to run up to the mage while they spew destruction spells out at me is pretty annoying.

I hate it Draugrs shout. Almost every time I fly across a room I think "HOLY SHIT! I'm dead!" before getting back up. And high level mages suck too.

Bears. F'ing hate bears I've come to the conclusion that any bear that is put into a Bethesda game is evil. They're not so bad once you reach god-like levels in the games, but are evil to low level characters.

the Draugr, they are simply too prevalent and the higher level you get the more ridiculous their health becomes, especially when you've been neglecting your enchanting/smithing like i had been the first time i encountered a deathlord i got mauled without so much as taking off a fifth of it's health, stinking draugr and their stupid health bar grumble.

now i have less trouble with them but they still annoy me as all hell.
there's simply too many of them, i swear there's more undead nords walking around skyrim then there are living ones.

I'd say dragons, but I still need souls so....
Probably Dwemer stuff. I hate that they're immune to both absorb health and slow enchantments.
Although skeevers tend to scare the living shit out of me every time they wait behind a door and attack me the second I go through it.

I have to go back to Whiterun each time I kill one because my scrawny mage boy can't carry anything

Any humanoid (which in Skyrim, seems to be any enemy with even the slightest leaning toward magic) that can cast a pesky frost spell. As my char is a dual wielding type, I rely mostly on getting in close to deal the most damage and getting hit by one of these spells that seems to slow me, appropriately, to glacial speeds is most infuriating.

Also, vampires, especially in groups. I recently stumbled upon a master vampire and his friends in a cave somewhere. Took many attempts of trial and error before finally coming up with a strategy that worked. Though calling "turn into a werewolf then charge into the middle of the group" a strategy may have been a bit rich.

In the end, equipping my two ebony maces and firing up the Elemental Fury shout made short work of that lot.

I don't really have any trouble with beasts...even the snowy variety, I can usually drop them fairly quickly now.

Hagravens, though I haven't met one in a long time. The second time I crossed one though, I threw myself off a sheer drop in my haste to get away from the deformed birdwoman. The fall probably still did less damage to me than the hagraven would have.
