Get Metal Gear Solid 2 (Substance) and 3 (Subsistence) too. And maybe the Fatal Frame series if you like scary games. I'm addicted. The gameplay is really solid in all of these, and the stories are amazing.

and I hear the Persona series (and, from what I've heard, most of the Shin Megami Tensei series) are very good, but I've never played them myself.

There's dozens upon dozens; the PS2 was one of the best systems ever...you really missed out, man!

FF12 for mindless time consumption,

Dragonquest 8 for a beautiful masterpiece that is unfortunately a turn by turn but makes up for it with beauty.

GTA Vice City, arguably the best the series had to offer.

if i could remember more i'd say so, but if your looking for a golden oldie try the ps1 game Intelligent Cube.

If you like fighters, I'd recommend Marvel vs. Capcom 2. I doubt you've gone this long without playing it, but it was ported to the PS2, so I figured it'd be a reasonable suggestion. I also thought DBZ Budokai (1 through 3) was a pretty fun series. Not perfect by any means, but fun. Everything else I can think of has been suggested.

Psychonauts- Weird, cheeky and fun
We <3 Katamari- Again, weird cheeky and fun
SSX Tricky- Unbelievably fun snowboarding game. Really well done and great as a multiplayer game.
Burnout revenge- drive around and destroy your car and hundreds of others too.

Edit: I just remembered Summoner 2. An older game, but I had heaps of fun with it.

Persona 4 has already been said I bet (Looking back up, the first comment. Good catch.), so I would recommend Odin Sphere. Sort of a sidescrolling beatemup rpg thing. It has an amazing aesthetic and was fun to play, a nice throwback to older beatemups.

Zone of the Enders: The Second Runner is one of my favourite games, big boss battles, fast paced action and giant robots with crazy attacks make this a game worth getting, seriously, also the first one was awesome as well: Zone of the Enders.

Shadow of the Colossus has already been said, but I too think it was awesome.
