I'm seriously outdated with anime, but still, you may want to check these out.
The Vision of Escaflowne - Might be pretty old now, but it's still one of the best anime I've ever seen. It has a bit of everything, it has an epic story about war, love, betrayal, hot chicks, some humanoid animals with lots of personality, it has dragons, giant robots, an epic soundtrack wich is completely orchestrated with gregorian chants and all... A must see.
Cowboy Bebop - I think any respectable anime fan has already watched this anime (also the movie is quite good) and you MUST see it. It's quite dark, but most of the time doesn't take itself too seriously, but it has some pretty heavy scenes involving lots of blood and lots of drama.
Saint Seiya (Knights of The Zodiac) - My all time favorite anime, kinda like YuYu Hakusho but it's heavily inspired by greek mythology. I'd recomend you start watching the current OVA called "The Lost Canvas", it's a prequel story, so you get charming characters, good to amazing fight scenes and LOTS of drama.

Oh, man. Bleach was such a disappointment for me. I got to the Hueco Mundo Arc before I finally said, "You know what? Fuck it."
Anyways, on topic. You want a good anime to watch? Watch Fullmetal Alchemist: Brotherhood. The 2003 series is good, too, but Brotherhood is where it's at. Seriously, check it out. It's very good, very engaging, has a great story, and is roughly 50 episodes.

It has some very key instances, one being: The main character is not a megalomaniacal evil genius, he's a megalomaniacal GOOD genius who uses evil means on occasion.
Death Note revolves around an emotionless prick for the most part, while Code Geass is centered on a single minded man trying to reclaim what is his and set things right. Code Geass has a protagonist who has values, and feelings.
Deathnote was quite literally just depressing, Code Geass, throughout all the amazing mech battles and deep story, still has lightheartedness about it.
As mentioned before, there are some love story side plots placed here and there as well.
I'd like to note that i am a fan of both, but Code Geass easily trumps Death Note, and i already hold Death Note in high regard.

Didn't seem like you picked up Fairy Tale yet, give that one a shot. I only read the manga but very enjoyable. It's Dragonball/Bleach/Naruto stylish... but still not... Someone please give a good explanation -.-

It's very lighthearted with an interesting and deep plot, that plays out partly as a love story as well. It's martial arts themed. :3

...Code Geass: it's hard to say what you'd like about Code Geass when we don't know what you don't like aboud Death Note (and there's much not to like).
...Higurashi: The ending was kind of spoiled for me too; yet I still went on with it and found it still to be worthwhile. If you do chose to watch it, skip Rei episodes 1 and 5; since those are retarded filler.
...Bleach: Your stance on "I'm going to stick with it since I'm so far into it already" will probably be invalid at some point, considering that show is probably going to be as long as 2 Dragonball series by the time the "writers" decide to make an ending.
As for recommendations (if they're not already mentioned):
Kanon is an amazing one. The story's done by the same guys that did Clannad (Key Visual Arts), and in my opinion, was better than Clannad. (Based on Clannad)
Toaru Kagaku no Railgun (A Certain Scientific Railgun) is a great mix of slice of life, comedy, and sci-fi/action. It's a spin-off of another show, but know that this is better than the show it's based off of. (Based onKey's only blunder Angel Beats)
Kannagi is the best "Sudden Girlfriend" genre I've seen so far (but I've got a few more I've got planned to watch, so that might change). It knows its audience and generally knows how to handle itself, an essential part of anime in my opinion. (Based on Working!! and Toradora!)
K-On! is a slice of life; it can get a little boring if you're only looking at the show from a comedic perspective, but it's (apparently) thoroughly enjoyable from a slice of life perspective. (Based on Lucky Star)
Tengen Toppa Gurren Lagann is the best Parody of the Mecha genre I've seen (people refer to it as a well done Kiddy Mecha, but that's not how I've seen it). (Based onthe Mecha you have there that I won't ever watch your Mecha Choices)
Ouran High School Host Club is a shoujo show that if you turn a blind eye to the shoujo elements, you find a damn funny show. (Based onthe Repetitive Shoujo Kaichou wa Maid-sama)
And I think I'll end the list there for now...

Well there is no real over arching plot... it's spread out between several arks each one dedicated to a different character, to help establish them better, plus in between episodes, containing their own story, that serve little purpose but are very entertaining non the less... if anything the only real plot revolves around each characters past catching up to them so there isn't much to spoil... I still say watch it because it's just so cool...Dango said:

Full Metal Panic, Gintama, Seto no hanayome, Fate/Stay Night, Seitokai Ichizon, Trigun, Great Teacher Onizuka, Desert Punk, Black Lagoon, Ergo Proxy...but my number one is definitely Gintama - the funniest anime and probably TV show I have ever seen.
The first 20-odd episodes are fillers that set the scene and character relationships. Even the sad and tragic endings have you coming out feeling great.
