Demon's Souls, but be prepared to die. A lot.
If you fancy a game that doesn't hate you, Uncharted 2 is a great showcase for the PS3's technical capabilities. Assassin's Creed II is fantastic, if you haven't already got it for another console, same with PoP: The Forgotten Sands. Blur is my racing game of choice.
If you're after something truly unique, Flower is an amazing PSN title. It's not something you really "play" though, more something you experience.
