The owned bed in the Whiterun house got me as well. It turns out that the single bed in the sideroom is for your Housecarl, Lydia. You get the big, bouncy double bed.
I actually had heaps of problems with Esbern, for the main quest. For me, his sound files weren't installed properly, so when I talked to him, he blitzed past all the dialogue without actually saying anything, and then wouldn't open the door for me. Once I fixed that though, it worked fine.
Other than that, Skyrim has been remarkably stable for a Bethesda game.
