Actually, Morrowind had some pretty nice lore and somewhat unique culture being portrayed in a mainstream western fantasy game for the 2000's. I'm not sure why they are being regarded that "highly" either, it's probably because Morrowind/Oblivion were the "premier" WRPGs on consoles and they only had to measure up against the likes of Fable and Two Worlds instead of the Baldur's Gate Trilogy, Fallout Series, Planescape: Torment, Vampire: Bloodlines, the Gothic series, The Witcher, Ultima series and all the Fantasy-setting MMOs out there (AoC, DAOC, LOTRO to mention but a few) etc.
I also think they have gained a lot of favour because Fallout 3 as well that is a pretty good sandbox game. But what gave Morrowind all that extra fame all those years ago was how easy it was to mod and that you could pretty much add anything you wanted to it.
But their RPG's are becoming more like run of the mill action games rather then trying to retain their own identity and gameplay. So I don't see myself getting all excited about Bethesdas future releases if Skyrim will turn out the way I expect it to.
