Try Therion, especially their symphonic era stuff, like for example this or this. Sounds good to me, as does Nightwish and Symphony X.
Damn, beaten to the punch... you're right; seeing how the term 'symphonic metal' was actually coined due to Therion in the first place I'd say it's a fair bet that that's what you'll get when listenting to their music.
Also you might want to check out 'Haggard', some truly epic songs there.

And if melodic metal counts too, then I would also want to give a special mention to Amon Amarth.
There's a huge diference between symphony metal and Amon Amarth, I agree though. Viking Metal ftw :D, oh and they're really good live.

OT: I'll just have to go with the same everyone else say. Although the only symphonic metal band I really listen to is Nightwish. Mostly with Tarja, It was more sypmhonic back then.

I think someone else suggested Dimmu Borgir, I'm going to second that motion. You can't go wrong with the album Death Cult Armageddon.

Wow... Dimmu Borgir legitimately frightens me now o_O Reminds me of an old, underground band that I think has faded into black (metal), Dawn of Ashes...
Just that scares you? I can only think of one band that I find legitimately creepy, and that's Insane Clown Posse. It's kind of hard to think of something more bizarre than a cult movement headed by a pair of rappers called Shaggy and Violent J., although the fact that they take themselves seriously, and that anyone would believe their nonsense, is funny at the same time as being kind of scary.

Yeah nowadays they and Dimmu Borgir would count as Extreme Symphonic Metal.
Lacuna Coil are not Symphonic. They are just Gothic Metal.

I could get into an essay whats what in metal, but i would just look like an ass.

The only bands I can think of right now (other than the ones mentioned) that might fit into this category are Keldian and Avantasia (although I think they might be more power metal).
Oh and http://www.metal-archives.com/ if that hasnt been mentioned before, has bands by genre and such so i guess look there.

Symphonic Black Metal? Sounds right to me... but hey, it's creepy and awesome, and that's what matters.

Wait... Lacuna Coil is Gothic? All the songs I've heard don't sound even remotely Goth... mind giving me a few citations so I can see where you're drawing the conclusion?

I'd actually kinda like to read such an essay... maybe post it somewhere in the User Reviews section, or something of that sort. If nothing else it'd start an interesting (probably fairly heated) discussion.

Favorite song by them. Turisas rocks.

I like Kamelot, Epica and a lot more. I don't really remember their names but a lot of really good ones show up on my Pandora station for Apocalyptica.

Also, a lot of bands being named aren't really Symphonic Metal... more pirate/viking/prog metal... but if they count too, Alestorm is an incredible band that should be checked out by everyone.

We're allowed Viking Metal? Then we need it's forefather's here.

Incidently, some of Bathory's earlier songs also gave Black Metal its sound.

Wow, a lot of metal threads recently, which means it's shameless plug time! (again)

So you love metal, eh why not join theHeadbangers [http://www.escapistmagazine.com/groups/view/Escapist-Head-Bangers]? A place to spark discussions and recommendations for anything and everything about rock/metal.

As for the topic itself, my favorite band is Kamelot when Roy Khan took the vocals. The guy's singing voice is just freaking epic. That, and the fact that they have so much variety. Sure, the music is a bit formulaic (intro-stanza-chorus-stanza-chorus-solo-last chorus-end) and there would be one ballad in an album for sure, but their delivery makes every song feel real special. Just take a listen to their album "Epica" then "The Black Halo" immediately after that and you'll see what I mean.

Kamelot and Epica are both great symphonic metal bands, but their collaboration produced one of my favorite songs of all time, its called The Haunting.

they are gothic ,gothic has a weird sound lacuna coil are gothic so it within temptation and cradle of filth its mostly the beauty and the beast vocals that define it

evanescene and him are considered (to me anyway)gothic rock

Kamelot, Epica, Sonata Arctica, Helloween, Stratovarius, Rhapsody of Fire (well some these are more power metal/ prog but since you Like Blind Guardian I'm sure you'll find a soft spot for these too) Diablo Swing Orchestra <- Symphonic avant-garde metal

most bands listed so far isn't "symphonic metal' in it's self but for example Symphonic avant-garde metal, Symphonic power metal, Symphonic black metal, Symphonic goth metal etc...

Lacuna Coil have no Symphonic Traits.Christina Scabbia doesn't have an Opetatic voice, just a more rocky voice, like Amy Lee or Anette from NightWish.Alot of people seem to think just because a bands female fronted, they are symphonic, which is totally not true.

Cradle used to be Black Metal, but now more Extreme Gothic metal i think, same as Dimmu Borgir.

Lacuna Coil have a kind of Beauty and The Beast thing going on,vocally that is.Which most is a common Gothic metal trait.

http://www.last.fm/music/Lacuna+Coil At least thats what Last.fm dictates.

Symphonic is probably my favorite subgenre of Metal. I'd agree with everyone here and Say Nightwish. I cannot believe nobody said Within Temptation! You cannot go wrong with Cradle of Filth.

Here's a few other bands I can think of:
Elis <--- So fucking awesome
Beautiful Sin
