Well, in popular language, sex and gender are indeed often used synonymously. The distinction between biology, choice of sexual partner, and cultural roles, still is in its infancy when it comes to the masses. So, when you talk with someone or read a book or play a game, you will indeed find many cases, where sex/gender is used synonymously, and basically means "all of those things".
But that something is popular doesn't necessarily make it reasonable. Being unable to distinguish those aspects in language, conditions people to automatically associate male biology with heterosexuality and cultural roles of a man. Plus, without a way to distinguish, one can barely talk efficiently about it in a differentiated way. Thats why among people who care about this, they distinguish between sex and gender.

"Gender" just is a criteria - similiar to how you could rate the "looks" of something, or the "sound" of something, or the "behaviour" of something. There may be a name for what you describe, haven't checked that.
