If you're a conjurer and an archer, I cannot recommend you enough to get the bound bow spell ASAP.
I'm serious, it's stupid powerful. And you don't even have to worry about ammo.
A critical hit easily takes out half of a generic dragon's health for me.
A sneak attack can outright kill a regular dragon, though those are rare for me now.
I usually encounter elder and ancient dragons now, and they can still take a beating.

Also, as for atronachs, there are flame, frost, and storm, in order of power.

I'm probably going to do my best to recreate the paladin I made in Oblivion, so I'll be crap at ranged combat (which will be mitigated somewhat against casters if the atronach stone in the game gives me spell absorb).

As a breton, magic doesn't bother me all that much.

Heavily armored enemies with shields and decent awareness so I can't sneak up on them. Otherwise, I'd just sneak on them and stealth murder the shit out of them with my sword and dagger combo. As it turns out, I end up dancing around them as best I can and hope my light armor takes enough of the damage.

I don't really have one. Playing on normal difficulty and I just murdered everyone in solitude without losing any health. Maybe it will get more difficult?

Im pretty good for anything else but when an enemy has a frost aura or uses frost based attacks my stamina drains crazy fast and if I stop blocking in an attempt to regain stamina I start taking extra damage from the attack.
I seem to be getting really messed up by Frost users too, more than any other power. Dragons are all piss easy except for frost Dragons, who can kill me in a matter of seconds.

His weakness is his weakness, he cannot take much damage, but he is fast, stealthy and a major damage dealer (30 times sneak attack bonus with mehrunes razor) he can easily clear out a building through use of invisibility and throat slicing, but in drawn out combat he gets messed up pretty easily.

I hear ya. They have a similar (if not quite as terrifying) effect on me as the Giant Radscorpions from Fallout 3.

For all my characters, it's that they can only do one thing.

Dengen - Can only be a tank.

Zha'Dee - Can only sneak & use a bow.

Althuine - Can only use magic (though with the amount of spells she's using & learning, she'll be fine if I can find a Bound Armor spell).

pretty much anything using fire magic can kill my Nord pretty easily, especially the flame-thrower type magic.

as to frost and shock i actually have found a few safeguards against them, but not fire

Bears and Sabre Cats. I'm a sneaky archer, but am too impatient to crouch in the wilderness unless an area looks ominous. So those two enemies often get the drop on me. They still rarely kill me, but it's usually a tough fight.

I have no weaknesses. Just finished the Alteration and Destruction mastery so dragonhide & lightning storm = OP lulz.

I'd say that my Magicka is a weakness but having potions and being High Elf it's not much of an issue.

hmm... the fact that my highest perked skill is Smithing, closely followed by Destruction (which is hindered by my low magicka regen rate and tendency to use swords).

Pretty much the same for me. I can typically survive any normal one hander enemy, but if any mage or Two Hander heavy survives my sneak attack, i'm royally boned.

Which is why the Sanguine Rose is the best weapon ever for me.

Of course, some high level enemies (like the named Dragon Priests) are tough as well, but that goes without saying.
