Brody's Bar, based on the "bar" they set up on the Destiny in the show "Stargate Universe". The only major differences are we aren't stuck in deep space and the drinks aren't nasty moonshine made from alien plants and the cups aren't beakers. 
It would be named "Counters" and it would be the first pub to encourage fair odds gambling. (and it would still clean up.) If you can manage to outsmart Blackjack with nothing but your mind then fair play to you! Then again we would make a big deal out of the winners skills (since that would be honestly impressive) and it get's tough to count when everyone's paying attention to you like that....
"The Six String" or maybe something like "The Bar Chord [http://en.wikipedia.org/wiki/Barre_chord]" or "The Barre Chord Bar".
I'd make it a really chilled, laid-back venue, with a stage for live music and maybe some stand up comedy. A place to go to hear something other than the generic pop stuff getting pumped out of the speakers in other bars, and for new bands to make their start. I'd probably like to have a different genre of band each night, with one night saved for comedy.

In addition to regular libations that pubs are expected to have, we would also sell the house special -- a homemade hot tottie. As for seating options, there would be comfortable chairs -- next to a simulated fireplace or near the chess table. Even the rugs would be comfortable to sit on (though, thinking about it now, they'd be a pain to clean...).
