I have to say your right about American's not having much of an appreciation for cheese. When i was a kid and ordering a cheeseburger at a restaurant if they gave me an option I always thought "freakin normal cheese" in the back of my head. But one time my family took a vacation to Colorado Springs and we went to a restaurant that had a vaguely French atmosphere that had a huge table of cheese. I'm talking like cheeses that were red and pink or purple. But not being one to scorn something without at least getting a fair shake my cousins and I tried every single one and I occasionally wish I would have learned the names of a few of the strange looking yet delicious ones... That being said I now have an appreciation for at least trying new cheese if only for the experience.

Mozzarella is my favorite. And the real kind, not the packaged kind.

The U.S. is lacking in it's own cheese, which is disgusting; but certainly not in appreciation. American cheese sucks, though. It's all disgustingly creamy and almost sweet in a disgusting way *shudders*
