It kinda depends on the people living there. If I know it's a family with little tech savvy, I'd take the little things they don't know they need to make their computer/Internet work, like the cable for the HDD or the RAM. If it's a family that knows more... probably the same thing, since those are the details that might piss them off the most. I know I'd lose some sleep wondering why someone would break into my place only to remove the power supply from my PC.

If you want to mess with people's sanity you don't steal stuff from their house, you re-arrange the stuff they already have. For example, I would empty the linen closet and any given other closet and swap the contents. Another great thing to do would be to glue their furniture to the walls and ceiling. Finally, If I do steal anything it would be toilet paper. ALL of their toilet paper.
